Buy a packet of dried soya cubes, Provençal spices, vegetables to taste at the store and we can start the magic. One of the possible variations is here.
What we need:

200 g soya cubes

1 onion

2 cloves of garlic

2 carrots

piece of celery

half a bag of frozen vegetables (peas, carrots, corn)

teaspoon paprika

teaspoon Provençal spice
First, prepare the soy cubes according to the instructions on the bag. Put 200 g of soya cubes into two litres of boiling salted water with peeled onion, garlic clove and a teaspoon of Provençal seasoning. Boil them in an open pot for 10 – 15 minutes. Drain the water and start preparing the vegetables.
Fry the chopped onions in the oil. When it starts to turn golden, add the chopped two carrots and celery, season with salt, cover with water and cook slowly under a lid, stirring occasionally. After 5 minutes, add the frozen vegetables with a finely chopped garlic clove and a teaspoon of paprika. Cook with the carrots and celery for 10 minutes. Stir in the soya cubes towards the end. As a side dish, the vegetable mixture with soya cubes can be accompanied by boiled potatoes with butter, which can be sprinkled with parsley or leek slices.
Wikipedia tells us that the name soy is derived from the Japanese word “shoyu”, which means soy sauce. Soy originated in northern and central China. It is grown on plantations in warm regions such as the USA, India, China, Brazil, Argentina and Canada. It grows to a height of 1-1,5 m. It can have up to 400 pods, 2-7 cm long, containing 1-5 seeds. It is rich in protein, containing up to 35 % protein. It is popular in vegetarian and vegan diets. It is used not only in the food industry for the production of soya milk, tofu, oil, sauces, but also for the production of biodiesel and in cosmetics for the production of soaps and other cosmetic products.
It is a good idea to buy healthy organic soya to ensure that it is not genetically modified and industrially processed.
